How it works:

We pre-sell beef by the whole, half and split half (quarter). A deposit reserves the animal until it is ready to process. We anticipate your beef being ready for pickup from the processor in late fall or early winter 2023.

Bulk beef is sold per pound of hanging weight . We will itemize the cost for the animal and for the processing. When we have the hanging weight, we will send you an invoice for the remaining balance to be paid to Legacy.

Frequently asked questions

When the animal is processed, it is gutted, and the hide and head are removed. It is then split in half. Each half is weighed to establish the “hanging weight” which determines your cost paid directly to Legacy Pastured Beef. The carcass is then hung in a cooler at the processing facility to age the meat prior to butchering. During this aging process some weight is lost (approximately 10 lbs per whole) as moisture evaporates from the meat.

We can’t help but mix in a little math lesson here. Remember symmetry from your math class? This isn’t complicated but maybe you haven’t thought about it like this before: A beef is symmetrical if it’s divided down a line from nose to tail – both sides are identical. A beef is asymmetrical if it’s divided down a line that goes from side to side – both front and back are not identical. For processing, a beef is split down the backbone into two identical halves or “sides”. Two people that each buy one side of the animal get identical pieces.

So what about “split half (quarter)”? If you take a half (aka “side”) and split that in half, it doesn’t create two identical parts. You end up with a front half and a back half which are different. If you order a “split half (quarter)” the processor will simply butcher the half and separate the resulting cuts to try to equally divide those cuts for the two customers that ordered quarters. There are parts of a quarter that can’t get evenly divided to each customer but that gets into the nitty gritty detail on butchery so the processor could give you way more information than we can on this topic.

Yes – at this time we are not offering any beef for sale that has not been pre-ordered in bulk. Reach out to our sister farm, Erba Verde Farms, to inquire about retail beef sales by the individual cut.

We are co-owned by the same owners of Erba Verde Farms! Hence the “s” in Erba Verde FARMS – a group of multiple farms. You will order through Legacy Pastured Beef for all bulk beef orders. Frozen retail cuts are sometimes available directly through Erba Verde Farms.

We’ll email you when your beef is ready for pickup at Erba Verde Farms in East Aurora.

Experience will be your guide here, but if you’ve never ordered bulk beef before here are some guidelines: For every quarter beef you’ll need about 4-5 cubic feet of freezer space. The freezer compartment of a refrigerator/freezer combo in your kitchen varies widely but most are between 5-8 cubic feet. That would easily store a quarter of beef. Most people choose to use a standalone chest or upright freezer to store their beef. For a quarter, a small chest freezer would be perfect.

A half of beef would require 8-10 cubic feet of freezer space. A medium size chest freezer should be sufficient for a half.

A full beef would require 16-20 cubic feet of freezer space – that’s a large chest freezer (one you could lay down in!)

You will receive all the cuts and ground from your portion of beef (whole, half or split half). You can customize your selections. Our processor has a list of standard cut options (see link below). For example, you can choose to have a higher amount of ground by choosing less roasts, or you could choose more roasts and receive less ground. In the butchering process there is expected waste due to removal of unwanted fat and bones. This waste accounts for the reduction in weight between hanging and packaging. Since this waste in the butchering process is dependent on the type of cuts you choose, we sell by hanging weight prior to butchering.

Keep in mind these are all approximations for a whole beef:

-60% of the live weight ends up as hanging weight (1000 lb live reduces to 600 lb hanging)

-65% of the hanging weight is turned into packaged meat for you to take home (600 lb hanging reduces to 400 lb of packaged beef)

For a quarter, your estimated take-home is 100 lb. For a half, your estimated take home is 200 lb.

We know that some customers enjoy the rich flavor of beef from an older animal. We have a very limited supply of older cows that are nearing retirement in 2024 and will be available for $3.75/lb hanging weight in split halves, halves and wholes. You could choose to receive the majority of this product as ground beef, but we think you’d be missing out on the incredible flavor of the steaks and roasts of our “aged on the hoof” beef.
