Pasture-Raised, Whey-Fed Bulk Pork

How it Works:
  1. You pick a quantity of bulk pork and pay a deposit.
    1. We pre-sell pork by the whole or half. A deposit reserves the animal until it is ready to process.
  2. We’ll notify you when we have your processing date scheduled with the processor.
  3. When your processing date gets close, we will send you a digital form to complete from the processor to specify your cut preferences.
    1. The processor can work with you directly at that point to answer any questions.
  4. We drop the animal off at processing.
    1. The processor then sends us the hanging weight of the animal so we can move forward with payment.
  5. You pay the remaining balance to Erba Verde Farms.
    1. Bulk pork is sold per pound of hanging weight. This price is for the animal only, and does not include processing. When our processor gives us the hanging weight, we will send you an invoice for the remaining balance to be paid to Erba Verde.
  6. You pick up the packaged pork from the processor in Holland and pay the processing cost directly to them.
    1. The processor will notify you when your pork is ready for pickup. You will need to pay the processing cost directly to Alliance Farm Butchery at pickup. The processor assesses a fee if your pork must be stored longer than 5 days at their facility after it is ready for pickup. Please note that smoked products will need to be picked up at a later date after they are ready.

Frequently Asked Questions:
● What is “hanging weight”?

○ When the animal is processed, it is gutted, and the hide is either removed or the hide is scraped of hair. It is then split in half. Each half is weighed to establish the “hanging weight” which determines your cost paid directly to EVF. The carcass is then hung in a cooler at the processing facility to chill before butchering. During this chilling process some weight is lost as moisture evaporates from the meat.

● How do I get my pork when it’s ready?

○ Our processor will contact you directly when your pork is ready for pickup at their location in Holland, NY. You must pay the processing expense in full at time of pickup. Per processor policy, there is a daily fee if you do not pick up your beef within 5 business days of when it is ready.

● Can you explain the two deposits?

○ The “animal deposit” reserves the animal from Erba Verde Farm. It helps us to cover some of the expenses in raising the animal and guarantees that the animal is spoken for. We pay a deposit to the processor on your behalf to reserve the processing appointment - we then assess that cost to you during pre-order but you will receive that deposit as a credit on your final processing bill.

● Why is my total packaged take-home weight from the processor less than the hanging weight?

○ In the butchering process there is expected waste due to removal of unwanted fat and bones. This waste accounts for the reduction in weight between hanging and packaging. Since this waste in the butchering process is dependent on the type of cuts you choose, we sell by hanging weight prior to butchering.

● How much does the weight change from the live animal until the pork is packaged for pickup?

○ Keep in mind these are all approximations for a whole pork:

■ 65% of the live weight ends up as hanging weight (300 lb live reduces to 195 lb hanging)

■ 65% of the hanging weight is turned into packaged meat for you to take home (195 lb hanging reduces to 125 lb of packaged pork)
